Fresh Blueberry Muffins

This weekend I decided to take out my new KitchenAid Mixer and give it a whirl. I decided that fresh blueberry muffins sounded delish, so I went to Pinterest to try to find the best recipe. So many of them looked complicated, so I found this one on AllRecipes and made my own adjustments. I got some good reviews from my co-workers so I'll definitely make it again!

Ingredients (for about 16 normal sized muffins):
  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 3 tsp baking power
  • 2/3 cup vegetable oil
  • 2 eggs
  • 2/3 cup milk
  • 1 big container fresh blueberries
For the crumb topping (which makes all the difference):
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 1/2 cup butter
  • Big sprinkle of cinnamon
To cook, preheat oven to 400 degrees. Grease muffin liners and start mixing your ingredients. Start with the dry ingredients, and then slowly add egg, milk and vegetable oil. Once everything is smooth, fold in your blueberries, but don't use the mixer or you could break them. Set aside and mix together the crumb topping. Your butter should be room temperature so it's easy to mix. Sprinkle on top of the muffins, and then bake for 20 minutes! They will come out looking beautiful! Enjoy :)
